อูมามิ

อูมามิ (「旨味 หรือ うまみ」 unami?) เป็นรสชาติของกลูตาเมตอิสระซึ่งพบได้ในอาหารตามธรรมชาติ และโมโนโซเดียมกลูตาเมต หรือ (ผงชูรส) อูมามิเป็นคำที่มาจากภาษาญี่ปุ่นซึ่งแปลว่ารสอร่อย ในภาษาไทยคำที่ใกล้เคียงที่สุดได้แต่ "รสหวานน้ำต้มกระดูก" หรือ "หวานน้ำต้มเนื้อ" ในภาษาอีสานมีคำว่า "นัว" ส่วนในภาษาอังกฤษจะมีคำว่า "Savory" หรือ "Meaty" รสอูมามิเป็นหนึ่งในรสชาติพื้นฐาน (basic taste) นอกเหนือไปจากรสเปรี้ยว หวาน เค็ม ขม

อาหารสดตามธรรมชาติหลากชนิดให้รสชาติอูมามิเนื่องจากมีงกลูตาเมตอิสระปริมาณมาก เช่น มะเขือเทศ เห็ดชนิดต่างๆ องุ่น และ วอลนัท นอกจากนี้อาหารหมัก เช่น น้ำปลา ปลาร้า น้ำบูดู แหนม ปลาส้มฟัก ซีอิ้ว โชยุ ซอสถั่วเหลือง รวมทั้ง โมโนโซเดียมกลูตาเมต หรือ (ผงชูรส) ก็เป็นสิ่งที่ให้รสอูมามิเช่นเดียวกัน
