Uncle Meat on Frank Zappan ja hänen silloisen yhtyeensä Mothers Of Inventionin kuudes levy vuodelta 1969. Levy on pääosin instrumentaalinen, mukana on vain pari surrealistisen outoa laulua, niin kuin vain Zappa ne osaa esittää. Uncle Meat on sinänsä virstanpylväs Zappan uralla, että klassiset- ja fuusiovaikutteet alkoivat olemaan olennaisempi osa musiikkia. Vuoden 1987 CD versio sisältää lisäkappaleen "Tengo Na Minchia Tanta", sekä lähes 40 minuuttia ääniklippejä levyn nimemellä kulkevan elokuvan (Joka valmistui vasta 80-luvulla) kohtauksista. Faneja ei kuitenkaan tiedettävästi kyseiset lisäkappaleet ole miellyttäneet, silä ne rikkovat kuuntelukokonaisuutta ja ilman näitä lisäyksiä levy oltaisiin saatu mahtumaan yhdelle levylle kahden sijaan. Zappalle mieluiset lyömäsoittimet (marimba ja vibrafoni) ovat paikoitellen hallitsevassa asemassa. Levyllä on käytetty sen aikaista studiotekniikkaa hyvin luovasti, ja levyä pidetään yhtenä Zappan parhaista. Alkuperäisen levyn nelospuoli koostuu King Kong nimisestä massiivisesta, lähes improvisoidusta Fuusiojazz instrumentaalieepoksesta.
